Products that, combined with the skill that characterizes our professionals and their particular magic at the time of cooking, make gastronomy one of the greatest attractions of our territory.

Main fresh products: Eels: Adult eel and elvers of a length below 10 cm are fished. They are casseroled with stock and white rice or “xapadillo”: an eel opened, dried in the sun, and conserved with salt.
Mussels: Of very high quality because of the waters of the Delta and a careful treatment process.
Oysters: The breeding and production of oysters, alongside mussels, is the most significant seafood farming activity in the Delta. Their meat is eaten fresh without any manipulation of any kind.
